The original Las Tortugas was a Food Truck. It was there that a vision of tortas made with fresh ingredients took hold in 2004: It would have freshly baked bread. It would have authentic mexican flavor. It would be the kind of place that feels like you are eating the best of mexican tortas.
Las Tortugas earned popularity and we were able to open our first store on 1549 W. Alameda in Denver, Colorado, and that first location turned into 6 across Colorado.
